A typical one-dish meal from the Konkan area of Maharashtra (INDIA) is wholesomely relished by all. One can eat this dish for Breakfast, Lunch or Dinner, or even as an evening snack. All in all, it can be eaten at any given time. Rice and lentils soaked for six hours and then grounded into a paste, kept fermenting overnight gives a texture to the batter and after cooking with very little oil makes it porous. It is cooked like pancakes on a heated pan, These pancakes are accompanied with jaggery infused coconut milk, mildly aromatic using Cardamom powder.
High in energy value, but at the same time light for your stomach, this dish can be eaten by children, adults, and the elderly too.
INGREDIENTS
2 cups uncooked rice
1 cup Urad dal ( black gram dal)
½ cup Chana dal (gram dal)
¼ teaspoon whole Methi (fenugreek seeds)
1 tablespoon Jeera ( cumin seeds)
Coconut milk of 1 whole coconut
½ cup jaggery powder
¼ teaspoon of Elaichi powder (Cardamom powder)
Oil for making Pancakes
1teaspoon salt
1/2 teaspoon halad (Turmeric powder)
