PUDACHI VADI

Pudachi Vadi, also known as Sambarvadi, is a famous snack in the eastern parts of the Maharashtra state. It is a popular snack in the Vidarbha region. There are two versions of this. Sweeter version and spicier version, especially you find in Kolhapur.


Pudachi vadi has an outer covering of Gram flour mixed with wheat flour and spices. It is filled with a mixture of dried grated coconut, coriander, chili powder, and Indian spices. It is deep-fried and very crispy.


This special snack is loved by all and can be prepared half done and stored in the refrigerator for about a week, just before serving you can deep fry and serve hot with sweet chutney or even tomato ketchup.


INGREDIENTS


FOR OUTER COVERING

  • 1 cup wheat flour

  • 1 cup gram flour (Besan)

  • 1 teaspoon salt

  • 1 teaspoon red chili powder

  • ¼ teaspoon Haldi (turmeric powder)

  • 2 tablespoon oil


FOR FILLING

  • 1 cup coriander washed and finely chopped

  • ½ cup dried grated coconut ( suka Khobara)

  • ¼ cup poppy seeds (Khaskhas)

  • 1 teaspoon charoli

  • 4-5 garlic pods

  • ½” ginger

  • 1 small onion

  • 1 green chili

  • ½ teaspoon salt

  • ¾ cup goda masala

  • ¼ cup oil
